{"id":142,"date":"2015-10-09T19:12:08","date_gmt":"2015-10-09T18:12:08","guid":{"rendered":"https:\/\/blogs.churlaud.com\/cuisine\/?p=142"},"modified":"2015-10-09T19:48:26","modified_gmt":"2015-10-09T18:48:26","slug":"charlotte-au-chocolat","status":"publish","type":"post","link":"https:\/\/blogs.churlaud.com\/cuisine\/2015\/10\/09\/charlotte-au-chocolat\/","title":{"rendered":"Charlotte au chocolat"},"content":{"rendered":"<p>Pr\u00e9paration : 45mn<\/p>\n<h2>Ingr\u00e9dients<\/h2>\n<p>24 biscuits cuill\u00e8re<br \/>\n250 g de chocolat \u00e0 dessert<br \/>\n20 cl de cr\u00e8me fra\u00eeche liquide<br \/>\n5 cl de lait<br \/>\n100 g de beurre<br \/>\n4 oeufs<br \/>\n35 g de sucre glace<br \/>\n10 cl de rhum (optionnel)<\/p>\n<h2>Proc\u00e9d\u00e9<\/h2>\n<p>1. Beurrer l\u00e9g\u00e8rement un moule \u00e0 charlotte et disposer dans le fond un rond de papier sulfuris\u00e9.<br \/>\n2. Verser 10 cl d&rsquo;eau et le rhum dans le fond d&rsquo;une assiette creuse (si on veut du rhum).<br \/>\n3. Tremper rapidement les biscuits et tapisser enti\u00e8rement le fond et les bords du moule (c\u00f4t\u00e9 bomb\u00e9 vers l&rsquo;ext\u00e9rieur). Attention, il ne faut pas qu&rsquo;ils soient trop d\u00e9tremp\u00e9s.<br \/>\n4. S\u00e9parer les jaunes d&rsquo;oeufs des blancs.<br \/>\n5. Mettre \u00e0 fondre le chocolat avec le lait dans un saladier \u00e0 bain-marie doux (moi, je passe au micro-onde pour faire fondre plus vite, ensuite je fais tout pareil sans bain-marie).<br \/>\nLe laisser fondre enti\u00e8rement et le lisser avec une spatule en bois. En maintenant la pr\u00e9paration au bain-marie ajouter peu \u00e0 peu le beurre en petits morceaux tout en remuant, puis les jaunes d&rsquo;oeuf l&rsquo;un apr\u00e8s l&rsquo;autre. Travailler la cr\u00e8me quelques instants jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit bien lisse et brillante puis retirer la casserole du feu et laisser refroidir.<br \/>\n6. Monter les blancs d&rsquo;oeuf en neige en ajoutant \u00e0 la fin le sucre glace en pluie.<br \/>\n7. Battre la cr\u00e8me liquide (tr\u00e8s froide) en chantilly un peu molle.<br \/>\n8. Incorporer les deux pr\u00e9parations \u00e0 la cr\u00e8me afin d&rsquo;obtenir un m\u00e9lange lisse et parfaitement homog\u00e8ne.<br \/>\n9. Remplir le moule avec la mousse au chocolat en la tassant l\u00e9g\u00e8rement, terminer par une couche de biscuits imbib\u00e9s.
